Shortcakes are crumbly biscuits that are sweet, made out typically from ingredients like flour, sugar, baking powder, salt, butter, milk or cream, and at times, eggs. Although there are many varieties of shortcakes, such as blueberry or peach shortcake, the most popular one would be shortcake made combined with strawberries, or better known as strawberry shortcakes.

Its appearance can vary according to preference, but what most recipes share is the slightly sweetened strawberry with whipped cream sandwiched between the shortcake biscuits. While the traditional versions used pie crusts for as the biscuit, some places, like in Japan, have replaced the biscuit recipe with sponge cake base instead, making it a favorite dessert during Christmas or birthdays in the country. But since the dessert can be found at any time of the year, people can easily find them at bakeries or dessert stores to satisfy their strawberry shortcake cravings regardless a celebration or not. While the best strawberry shortcake recipe varies according to preference, here is one recipe that you will definitely enjoy!

The ingredients you will need for this recipe that serves 6 would be 1 pounds of stemmed and quartered strawberries, 5 tablespoons of sugar, 1 cups of all-purpose flour, 2 teaspoons of baking powder, teaspoon of baking soda, 2 tablespoons of sugar, teaspoon of salt, 1 cups of heavy cream, and whipped cream. Start off by mixing the strawberries with 3 tablespoons of sugar, and then leave it in the refrigerator for 30 minutes so that the juice can develop. Then, preheat the oven to 400F. In the meantime, sift the flour with the baking powder, baking soda, salt, and 2 tablespoons of sugar in a medium-sized bowl. Add the heavy cream to the combination, and mix well.

You can then put the mixture onto an ungreased 8-inch square pan and bake for approximately 18 to 20 minutes or until golden. After that, you may remove the shortcake from the pan, and then leave to cool on the rack. Slice them into 6 pieces, and then halving them horizontally. Then, take the strawberries and its juice earlier, onto the bottom of each of the cakes. Finalize the serving with a generous amount of whipped cream on them, and overturn their halves to sandwich the cream. Add more whipped cream and strawberries on its top, and serve. Now, isn't this the best strawberry shortcake recipe or what?
